Parmesan Crusted Garlic Confit Lemon Chicken Breast

Ingredients

  • 4 thin chicken breast slices (chicken cutlets)

  • 2 eggs, beaten

  • Fresh Parsley

  • Fresh Thyme

  • 1/2 cup chicken broth, I’m using @traderjoes

  • 2 tbs butter

  • 1 lemon- juiced

Bread crumb mixture

  • 1/2 cup Panko bread crumbs

  • 1/4 cup Parmigiano Reggiano- shredded

  • Salt and pepper to taste

Garlic Confit

  • 10 garlic cloves

  • 1/3 cup olive oil

  • 1/2 tsp salt

  • Fresh Thyme

Prepration

  1. Add garlic cloves, olive oil, salt and thyme into a small baking dish like a remekin and roast at 325 F for about 25 mins

  2. Strain the garlic confit oil into non-stick skillet

  3. Dredge each chicken breast slice into the egg mixture and then the bread crumb mixture and sear in the garlic confit oil on both sides over medium heat until golden brown

  4. Remove chicken from the pan and add garlic cloves from confit and smash them, followed by chicken stock, butter, lemon juice, salt and pepper and bring to boil. Then reduce heat and simmer for a few minutes until the sauce thickens

  5. Add the chicken back to the pan to warm and then finish with chopped parsley and thyme and enjoy!
