Pork Belly Burnt Ends
I get my pork belly from Costco. It is already cut into strips with the skin removed. All you need to do is cross cut it into cubes. You can subsiturte any sweet grilling glaze for the Maple Bourbon Grilling Glaze. You can also use store bought rub. Just make sure it is a sweet rub (based on brown sugar).
Ingredients
5 pounds pork belly (skin removed and cut into 1.5 inch cubes)
¼ cup Sweet Rub (Recipe below)
¼ cup dark brown sugar
1 Tablespoon coarse sea salt
2 teaspoons cracked black pepper
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground mustard
½ teaspoon cayenne pepper
Canola oil
½ cup Maple Bourbon Grilling Glaze

4 Tablespoons butter (cut into pieces)
Preparation
Preheat your smoker to 250 degrees F with maple wood for this recipe, but apple and cherry work great as well.
Spray the pork belly on all sides with cooking oil and seasoning liberally with the sweet Rub.
Arrange the pork belly squares on a flat cooling rack or grilling tray so there is enough space for airflow between each piece. Place the rack or tray in your smoker and smoke for about 3-4 hours or until the internal temperature reads 165-175 degrees F.
Transfer the smoked pork belly to a large cast iron skillet. Drizzle with about 1/2 cup of Maple Bourbon Glaze and top with 4 Tablespoons of butter, cut into pieces.
Cover the cast iron skillet with a lid and return to the smoker or oven at 250 degrees F for an additional 1.5-2 hours, or until the thermometer feels like it’s sliding into your pork belly burnt ends super easily. Your looking for super tender.
Once the pork belly burnt ends are at your desired texture, remove them from the grill and let them rest for 20 minutes or so until the sauce tightens around the outside and they cook slightly.
