Tomato, Peach and Burrata Mediterranean Salad

This particular recipe uses fresh peaches, some sweet cherry tomatoes, orange slices, mango pieces, and some burrata. The vinaigrette is the hit of the salad. You can also use fresh buffalo mozzarella or pearl mozzarella if you cannot find burrata.

The ratio for a perfect vinaigrette is 3:1 (3 Extra Virgin Olive Oil: 1 Vinegar)

This ratio allows you to make any quantity of vinaigrette. Just add in whatever extras you want based on the recipe.

Ingredients:

  • 1 large burrata cheese or several small ones if creating individualized plates

  • 2 or 3 fresh peaches sliced into small bite-sized wedges

  • Fresh or canned orange slices

  • A mango sliced into bite-size

  • A handful of fresh basil leaves

  • fresh thyme leaves sprinkled on the salad

Vinaigrette

  • 3 Tbsp extra virgin olive oil

  • 1 Tbsp balsamic vinegar (or the vinegar of your choosing)

  • 1 clove of minced garlic

  • 1 tsp of honey

  • pinch of salt

  • 1 tsp fresh thyme leaves

Preparation:

  1. Prepare the vinaigrette. I like to blend mine in a small blender but, a good vigorous shake in a container will work too. Taste and adjust sweetness or salt - set aside to allow flavors to infuse.

  2. Slice all your fruit and place it on a platter or individual plates. Top with fresh basil leaves and some fresh thyme leaves.

  3. Just before serving, break open the burrata and then dress the fruit with the vinaigrette.

  4. Serve immediately.
