Creamy Lemon Pastina

Creamy Lemon Pastina is incredible and simple.

Ingredients

  • 2 tbsp butter

  • 1 shallot, diced

  • Salt and pepper, to taste

  • Red pepper flakes, to taste

  • 1 cup acini di pepe pasta

  • 2.5 cups chicken broth

  • 1/2 cup cream

  • Zest and juice from 1 lemon

  • Freshly grated parmesan

  • Top with Black pepper and olive oil

Preparation

  1. Melt 1 tbsp of butter in a pan over medium/low heat.

  2. Add in the shallots followed by salt and red pepper, to taste. Saute for a few minutes.

  3. Add in uncooked acini di Pepe pasta and stir. Let toast for a few minutes.

  4. Add chicken broth and cream. Simmer for about 10 minutes, stirring occasionally.

  5. Add in the remainder of the butter, Freshly grated parmesan to taste, lemon zest, and lemon juice. Stir and taste for seasonings.

  6. To serve, top with black pepper, olive oil, and another sprinkle of Parmesan.
