Lemon & Honey Glazed Salmon

A very simple recipe for two. It works great when served with rice, roasted potatoes, or lemon pepper roasted asparagus.

I also like it with also with lemon or lime cilantro rice.

Ingredients

  • 2 salmon fillets, skinless (about 1/2 pound)

  • 1 tsp garlic powder

  • 2 Lemons sliced +1/4 juice

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • 1 tbsp oil

  • 1/4 tsp Paprika

  • Chopped parsley

Preparation

  1. Mix Garlic powder, a small squeeze of lemon juice, honey, mustard, oil, and paprika in a small bowl to make the sauce.

  2. Cover the bottom of a glass baking dish with the lemon slices.

  3. Place the salmon fillets on top.

  4. Brush the sauce on the salmon keeping 1/3 of the sauce on a for later.

  5. Bake at 400F for 10 mins

  6. Remove from the oven and brush the remaining sauce on top of the salmon.

  7. Continue baking for another 5 to 7 minutes

  8. Sprinkle chopped parsley and serve.
