Lemon or Lime Cilantro Rice

Ingredients

  • 2 cups water or use chicken broth

  • 1⁄4 cup lemon or lime juice

  • 2 tablespoons grated lemon or lime rind

  • 1 teaspoon garlic salt

  • Fresh cilantro, chopped

  • 1 cup long-grain rice

Preparation

  1. In a saucepan, combine water or chicken broth, lemon (or lime) juice, rind, and garlic salt and bring to boil.

  2. Reduce heat and stir in rice. Cover and simmer for about 20 minutes or until all liquid has been absorbed.

  3. While rice is still hot and just before serving, add chopped fresh cilantro and toss gently.

  4. Serve with fish or seafood.
