Miso Noodle Soup

This is a good soup for a cold day. it’s easy to make and does not need a lot of time for the flavors to develop.

Unlike the soup you get at Japanese restaurants, this soup includes miso and tofu but not seaweed.

If using Miso broth, skip adding the two cups of water.

I peel the carrot and chop off the very top and the smaller bottom end. Then use the vegetable peeler to slightly flatten on side to allow for smooth strokes to make the carrot ribbons with the peeler.

You can use your favorite noodles, I think Spaghetti / Lo Mein works the best in soups because they maintain their shape, Most recently I used a package of Pad Thai noodles. More than the 4 oz in the recipe because they are fresh and do not expand like dry noodles.

Ingredients

  • 32 ounces of vegetable broth

  • 2 cups water (if using Miso Paste)

  • 4 ounces spaghetti noodles, broken in half

  • 1 (14-ounce) container of extra-firm tofu, drained and cut into small, bite-sized cubes

  • 1 medium red bell pepper, sliced into bite-size strips

  • ⅓ cup thinly sliced green onions

  • 2 teaspoons grated fresh ginger or ginger paste

  • ⅛ teaspoon red pepper flakes

  • 1 cup fresh snow peas, halved crosswise

  • 1 medium carrot, peeled and ribboned using a vegetable peeler

  • ¼ cup white miso or 2 8 oz Miso Broth

  • 1 tablespoons sesame oil

  • 2 tablespoons tamari or soy sauce

Preparation

  1. Bring the broth and water (if using) to a boil over high heat in a large soup pot. Add the spaghetti and let the mixture return to a hearty simmer. Cook for 3 minutes, stirring occasionally.

  2. Stir in the tofu, bell pepper, onions, ginger, and red pepper flakes. Bring the mixture back to a simmer. Cook for 3 minutes.

  3. Stir in the halved snow peas and carrot ribbons. Cook for 1 to 3 minutes more or until the peas are crisp-tender and the noodles are cooked through. Reduce the heat to low.

  4. If using Miso paste Transfer about ½ cup of broth to a small bowl and stir in the miso. Once the mixture is smooth, stir it back into the soup. Otherwise, stir the Miso broth into the soup.

  5. Stir in the sesame oil and soy sauce/tamari.

  6. Taste the soup, if desired you can add a bit more soy sauce / tamaro or sesame oil.

  7. Remove the soup from the heat and serve it right away.
