Peach Charlotte Cake

This recipe can be made with strawberries or mangos as well. It is a healthier version of the classic recipe made with condensed milk.

I would suggest you add 4 oz of diced peaches (drained) to the yogurt mixture or a teaspoon or two of peach extract for a more intense peach flavor

Ingredients

(makes a 8” or 9” cake)

  • 1 - 2 packages of ladyfingers depending on size.

  • 1 15 oz can peach slices

  • 5.3 oz Chobani peach yogurt

  • 7 oz Chobani Greek Yogurt Drink (peach flavor)

  • 1/2 pint heavy whipping cream

  • 1 tbsp gelatin

  • 3 tbsp sugar

  • 6 oz water

Preparation

  1. Sprinkle gelatin over the water in a bowl. Add in sugar and place the bowl in a pan of simmering water, stir until dissolved. Set aside to cool.

  2. Drain peach slices and reserve juice.

  3. Dip ladyfingers in syrup from canned peaches.

  4. Arrange ladyfingers around the inside and base of a springform pan prepared with non-stick spray. You may have to cut the ladyfingers in halves or thirds to fit well for the bottom.

  5. Mix yogurt and yogurt drink and add in cooled gelatin solution, Mix well.

  6. Whip whipping cream until firm peaks form.

  7. Fold in the yogurt mixture with the whipped cream.

  8. Pour the filling over the ladyfinger base. Cover and refrigerate till set.

  9. Decorate the top with peach slices.
